National Burger Day

 In honour of National Burger Day (that’s May 28th for those of you who may not know), our Executive Chef, James is sharing one of his best burger tips. While most people focus on the burger itself, we think it’s just as much about the sides. And what he suggests are no ordinary chips… We’re talking about twice cooked duck fat kipfler potatoes… Yum! After all, National Burger Day is synonymous with #CheatDay, so what better excuse to go all out. Would be rude not to!

For those who want to mark the occasion without having to slave away in the kitchen, you’re in luck… Our Watsons Bay Beef Burger with bacon, lettuce, cheese, house famous special sauce and chips is here to save the day. Monday’s just so happen to be our special burger night, too. And by that we mean $15 burgers all night from 5pm! If this isn’t fate we don’t quite know what is.

Duck Fat Kipfler Potato Chips

Ingredients

Serves 4.

  • 250g kipfler potatoes, unpeeled and well washed
  • sea salt
  • 4 sprigs fresh thyme
  • freshly ground pepper
  • extra virgin olive oil or duck fat

Method

  1. Place potatoes in a pot with cold water and salt. Bring to a boil then reduce heat and simmer until tender, about 25 minutes. For the last few minutes, add the thyme sprigs. Drain well and allow potatoes to dry out.
  2. Heat oven to 200C. In a roasting dish, place the potatoes and thyme. Crush the kipflers slightly with the back of a fork. Sprinkle over sea salt and plenty of oil (or duck fat if using). Place in oven and roast until golden and crisp. Season with freshly ground pepper and serve immediately.
