Christmas Day Lunch x Interview with Executive Chef John Pye

For those who are looking to try something new this Christmas; hang up your apron and grab a glass, because we’re about to take all of the stress out of planning Christmas lunch.

We asked our Executive Chef John Pye a few quick questions about his mouth watering, four course Christmas Feast, available to be booked now.

Hi John! You’re originally from Liverpool in the UK. Tell us about some of your cooler climate Christmas favourites?

Mince pies were a long standing favourite of mine, and I could never go past a traditional Christmas Pudding with custard. Nowadays, living in Australia, I’ve adapted my favourite to the warmer weather – I make an ice cream version of a traditional Christmas pud, and it’s a hit in the warmer months.

Tell us why you’re so excited to create summer inspired Christmas menus

Christmas in Australia is all about fresh produce, which I’m of course hugely passionate about. Fresh fruit is abundant, and seafood is at its prime in summer, so the menu was put together with the balmy Aussie climate in mind.

For example, we’ve used a caramelized pineapple salsa to accompany our whisky and maple glazed ham. Pineapples are in peak season and so sweet and juicy. We’ve combined the pineapple with some sugar, some lime and some chilli for a serious flavor kick.

Talk us through some of your favourite elements of this year’s menu

I’ve combined some old and new elements for this menu. The Whisky glaze on the leg of ham is a traditional glaze used back in the UK, and it’s great to add a depth of smokiness to the ham. For our turkey stuffing, we’ve taken elements of middle eastern flavours and used dried figs and cous cous in our stuffing and nodded to classis Australian ingredients and produce by adding in macadamia nuts.
